This one food is worldwide. The term “cordon bleu” itself refers to several types of food. Starting from chicken cordon bleu, veal cordon bleu, to pork cordon bleu, you can find it as a menu at Western restaurants.

So, what is Cordon Bleu?

People also know cordon bleu as schnitzel cordon bleu. That means the cheese wrapped around the meat. Another meaning is meat with cheese filling. Furthermore, this meat is wrapped and fried, either with a little oil or deep-fried.

Chicken meat is the main ingredient of this food. Hence, the name of this food is chicken cordon bleu. The chicken part used is chicken breast.

Meanwhile, veal or pork cordon bleu usually uses offal or thinly formed pork like ham and a piece of cheese. It’s different from the ham cordon bleu variant. This food is given an additional filling in the form of mushrooms to complement the cheese.

Cordon Bleu History

The origin of the word cordon bleu comes from French, which means blue ribbon. Initially, this food was intended for owners of blue ribbons. It is the highest caste found in France. The name is L’Odre des chevaliers du Saint-Esprit which was under the authority of Henri III of France in 1578.

Over time, the term shifted to become the standard for preparing food for aristocrats. Chefs on their aprons also used blue ribbons to indicate the mark.

The cordon bleu found when someone mixed fried meat (schnitzel) with cheese filling. This variant of processed meat schnitzel was first introduced in Brig, Switzerland, in the 1940s. The term chicken cordon bleu itself became known after appearing in the New York Times magazine in 1967.

Because of its popularity, there are many variants of this food. But generally, these recipes still use ingredients in the form of thin slices of meat and cheese.

The best-known type of cordon bleu is chicken cordon bleu, which uses very thinly sliced ​​chicken breast, then topped with ham and a slice of easy-to-melt cheese. However, in this recipe, I made some adjustments. The main ingredients of this recipe are chicken breast, cheese, smoked beef, and breadcrumbs. In this recipe, I used smoked beef instead of ham because I wanted to make it halal.

To make this recipe is not as complicated as it looks. Wrap smoked beef and mozzarella cheese around the chicken breast. Some tips: roll the smoked beef and mozzarella cheese first and then roll it over the chicken breast. That’s because if it’s rolled together, the mozzarella cheese will come out of the wrapper when it’s fried. Enjoy it while the cheese is still melting in the chicken!

Slice each chicken breast into 2 parts lenghtwise. Flatten with meat tenderizer. Seasoned both side with salt and pepper. Place smoked beef and mozzarella cheese on top chicken breast. Roll smoked beef and mozzarella cheese first, then roll it with chicken breast.

Mix all the dry seasoning except bread crumbs until evenly distributed. Beat the eggs evenly in another bowl.

Coat the chicken breast respectively with flour mix, egg wash, flour mix, egg wash, and then bread crumb. In a pan fry, heat the cooking oil over medium heat. Fry the chicken cordon bleu until nice and golden. After the the chicken is cooked, rest it on a cooling rack to remove excess oil. Serve with ketchup and mayonnaise. Enjoy!

TIPS & TRICKS FOR THE BEST CHICKEN CORDON BLEU

  • Use small chicken breasts. Cut it in half vertically. Then, slice horizontally. The chicken breast sliced has to be thin.
  • When mashing the chicken, it starts from the center.
  • The oil should be just warm when the chicken comes in. Let the oil heat up later.
  • Use low heat to give the chicken a chance to cook before it browns.
  • If the surface is not brown, you can heat the fire a little.
  • There are several techniques you can do to roll chicken cordon bleu. You can do it right away without using any tools like in this recipe. However, some roll it in plastic wrap or stick a toothpick.
  • To test and make sure the chicken is well-cooked, you can use a digital thermometer.
