This easy chicken taco soup is a big hit in my house! Your slow cooker will do most of the work for you. Just dump everything in there, shred the chicken once it’s nice and tender, mix in the shredded cheese and cream, and then thank me later. Serve this tasty comfort food with tortilla chips, avocado, cilantro, extra cheese, or anything else you’d like.

My picky eaters can’t get enough of this easy meal! It’s delicious and easy to make ahead of time in your slow cooker.

Ingredients

  • 2-3 chicken breasts (1.5 pounds)
  • one packet chicken taco seasoning
  • 2 cans Rotel diced tomatoes & green chilies
  • 1 can black beans
  • 1 can whole kernel corn
  • 3 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 3/4 cup heavy cream

Step 1Place the chicken breasts onto the bottom of your slow cooker and evenly sprinkle the taco seasoning over top.

Step 3Pour 3 cups of chicken broth over top and then cook on LOW for 4-6 hours or HIGH for 2-3 hours.

Step 4Once the chicken is nice and tender, pull it out of the slow cooker and shred it on a cutting board with a few forks.

Step 5Return the shredded chicken back to your slow cooker and stir it in with the hot soup mixture.

Step 6Stir in the heavy cream and shredded cheddar cheese. Two cups of cheese is enough, but you can add an extra cup if you like things extra gooey!

Step 7Continue cooking for 30+ minutes, or until the cheese is fully melted and the broth has thickened a bit.

Step 8Enjoy with crunchy tortilla chips, diced avocado, fresh cilantro, extra shredded cheese, or anything else you’d like to throw on there.

This is one of my favorite dinner recipes for just about any occasion. Not only is it insanely delicious, I love that it can be made ahead of time and then left to keep warm in my crockpot until we are ready to eat. Double the recipe if you want leftovers the next day!

Easy Creamy Chicken Taco Soup

If you're looking for easy dinner ideas for a picky family with kids, you've just hit the jackpot! This creamy chicken soup is delicious and simple to make in your slow cooker with just a few basic ingredients.

Ingredients

  • 2-3 chicken breasts (about 1.5 pounds)
  • 1 packet chicken taco seasoning (1/4 cup)
  • 2 (10oz) cans Rotel diced tomatoes & green chilies
  • 1 (15oz) can black beans (drained & rinsed)
  • 1 (15oz) can whole kernel corn (drained)
  • 3 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 3/4 cup heavy cream

Instructions

  • Place the chicken in the bottom of your slow cooker and evenly sprinkle the taco seasoning over top.

  • Dump the cans of tomatoes & green chilies, drained and rinsed black beans, and drained corn over the seasoned chicken.

  • Pour in the chicken broth and cook on LOW for 4-6 hours or HIGH for 2-3 hours.

  • Remove the chicken breasts from the soup and shred on a cutting board with a few forks. It should be very tender and super easy to pull apart, if not, it's needs a little more cooking time.

  • Return the chicken back to the soup and stir in the heavy cream and shredded cheddar cheese.

  • Cook for an additional 30+ minutes, stirring occasionally until the cheese is fully melted and the broth has thickened.

  • Serve with your favorite toppings! We love tortilla chips, diced avocado, cilantro, as well as a little extra shredded cheese to make it extra gooey.

Notes

  • My family of four can eat almost all of this soup for dinner with only one serving left for later. I'd recommend doubling the recipe if you're feeding a crowd or would like to have leftovers the next day.
  • I use the MILD diced tomatoes & green chilies because my daughter is sensitive to spice, but you can opt for the regular or spicy cans as well, or even add your own spice on the side such as cayenne or red pepper flakes.
  • Any kind of taco seasoning can be used for this easy recipe. I like the McCormick brand of chicken taco seasoning, but you can also use a regular packet of taco seasoning or 1/4 cup of your own homemade seasoning.
  • Want to make this more like a chili? Add an extra can of beans! Black beans or pinto beans are a good choice. This is also an inexpensive way to make it go a little further.
